My night to cook; I’ve got a 14″ Cast Iron Wok and I know how to use it. Tonight’s dinner is a Pork Stir-Fry with roasted apple (apples cooked in olive oil). Toss in some onions, garlic, potatoes, zucchini and bok choy. Maybe a couple carrots and celery if you’ve got it. I was out of those tonight. Add a little brown sugar, maple syrup, white wine, olive oil, Dijon mustard, cider vinegar and a few spices. Covered and simmer till potatoes are soft. Just before serving, add fresh diced apples and let simmer a few minutes more and serve.
